I was taking baking classes online and one of my final assignments, I had to create my own farm to table pie. I was excited at the idea of making my own dessert, using the ingredients I wanted and coming up with all the ideas on my own. I had been super interested in the vegan section of my baking classes and now was my opportunity to really showcase my passions. I have made and had many an apple pie in my day. I took a mixture of things I enjoyed in different recipes and changed up the ingredients to try and make it a bit of a healthier and vegan version. I only used ancient grain flours. These contain multiple health benefits and aren’t refined like AP flour, which in turn means they are better for you. The buckwheat flour has a bit of a nutty note, which pairs well with the apples and cinnamon. I also made sure not to use any refined sugar. Only natural sweetness in this baby. As a result, this pie wasn’t super sweet, but when paired with ice-cream, it was the perfect amount of sweetness. I enjoyed the pie all on its own too. Once your taste buds get more accustomed to these ‘healthier’ flavors, the overwhelmingly sweet flavors of desserts are not missed one bit. Don’t get me wrong, I love double chocolate this, and super indulgent treats too. It’s just a nice break having something that isn’t so rich and vegan as well. This would be a great breakfast also, as it was like an apple strudel treat. I’m quite happy with how this turned out and I hope you all enjoy it too!
